3 Simple Paleo Chicken Crock Pot Recipes

When time, deliciousness and convenience collide you end up with these three chicken crock pot meals.

Finding a recipe the whole family can enjoy, is healthy and that I can easily cook has always been a challenge. That's why I wanted to share these 3 simple paleo chicken crock pot recipes with you. 

It was rare for me to cook when it was just my husband and myself. Going from cooking for two to a family of four or more can be challenging.

It has been somewhat of an adjustment when the reality that keeping my two boys alive means providing them three meals a day and the snacks in between. And growth spurts? My word! There are some weeks where it seems like it is their hobby to put food in their mouths.

Praise the Lord for crock pots and moms who have gone before me. My sister-in-law (mom of three boys) shared a few of her family's favorites meals and I'm thrilled to be able to share these simple chicken crock pot recipes with you.

These recipes take less than 20 minutes to put together and produce a hearty meal where everyone is happy and satisfied as a result. Believe it of not, one of them has only TWO INGREDIENTS! I mean really, can dinner get any easier than that?

3 Simple Paleo Chicken Crock Pot Recipes

1. Pulled BBQ Chicken Sandwiches

- 2-3 chicken breasts
-16oz of your favorite BBQ sauce (we use Sweet Baby Ray's)

*Place in crock pot on low for 4-6 hours.
*Shred chicken with fork.
*Serve over hamburger buns or gluten-free chips.

That is seriously it! This is my go-to when I have a lot on the calendar just before dinner. We have it about every two weeks at my house. Add some steamed veggies and you are golden.

2. Chicken Tortilla Soup

-2-3 chicken breasts 
-2 cans (14oz) low sodium chicken broth
-1 can (15oz) black beans
-1 can (15oz) corn, rinsed
-1 can (15oz) fire roasted diced tomatoes

*Place everything in the crock pot on low for 6-8 hours.
*Remove chicken and shred.
*Serve with sour cream, shredded cheddar cheese and tortilla chips.
*You can also add diced avocado for added texture.

This is great served on its own, but if members of your family aren't abiding by the paleo diet, consider picking up some fresh French or Artisan bread to go with this instead of the chips. This soup is quite hearty and also freezes well; we often freeze the leftovers for later.

3. Chicken Fajitas

-2-3 chicken breasts, sliced
-2-3 bell peppers (red & yellow), sliced
-1 white onion, sliced
-½ cup chicken broth
-2-4 TBSP of fajita/taco seasoning (we use McCormick's, but if following strict paleo diet, check label for gluten-free seasoning)

*Slice chicken, bell peppers and onion in thin slices.
*Place everything in crock pot on low for 4-6 hours.
*Serve over a bed of fresh Romaine lettuce (for paleo) or in tortilla shells.
*Serve with sour cream, shredded cheddar cheese and diced tomatoes.
*For extra awesomeness, add some avocado slices.

I appreciate this meal so much because it is so hearty there is really no "side dish" necessary as the veggies are built in. Also, this can be made into a delectable salad (my preference.) My boys eat gobs and gobs of this meal. A family favorite for sure.
